Chocolate Dipped Hokey Pokey

Ingredients:
10 tbsp brown sugar
4 tbsp golden syrup
2 tsp baking soda
150g dark chocolate
Directions:
Grease or line a baking tray.
Combine the sugar and golden syrup in a saucepan and over a medium heat bring it to the boil, stirring constantly.
Boil for 2 minutes, again stirring constantly.
Stir in the baking soda, whipping the mixture up quickly.
Spread the mixture onto the greased baking tray.
Leave to harden and as soon as the mixture has cooled break it into pieces and place it in an airtight container.
Melt the chocolate over a bain marie until smooth.
Dip each piece of Hokey Pokey into the chocolate and place on a sheet of baking paper until the chocolate has set.
